Perle de Vigne is the perfect illustration of our firm’s know-how. Here Pinot Noir and Chardonnay show their very best. Pale yellow color with green tints. A complex nose with aromas of peach and then nuances of flower. Lively, fresh attack with a good harmony between red fruits and citrus. The finish is lovely and well-balanced.

Founded in 1877 by Jean Bouillot the estate of Louis Bouillot is a specialist Cremant de Bourgogne producer now run by Jean-Claude Boisset and it produces a range of excellent Methode Traditionnelle sparkling wines from sites across the Côte d'Or. The Cremant de Bourgogne appellation was officially created in 1975 and the domaine, based in Nuits-St-Georges, produces great value sparkling wines that provide a great alternative to Champagne, from the vivid pinot Noir fruit of the Perle Bourgogne Mousseux Rouge to their lively and complex Perle de Vigne Grand Reserve.

Aligoté is a lesser-known white grape variety primarily grown in the Burgundy region of France, where it produces wines that are appreciated for their fresh and lively character. Aligoté wines typically exhibit a pale, straw-yellow color and offer an aromatic profile that includes green apple, lemon, and white flowers, with occasional hints of herbs and minerals. These wines are known for their high acidity, which gives them a crisp and refreshing quality, making them an excellent choice for a variety of culinary pairings. On the palate, Aligoté wines are light to medium-bodied, with flavors that often reflect their aromatic notes, such as citrus, apple, and sometimes a touch of salinity or chalkiness. The high acidity also makes them ideal for sparkling wines, such as the traditional Crémant de Bourgogne.
In winemaking, Aligoté requires careful cultivation and vinification to bring out its best qualities. It is often grown in less prestigious sites in Burgundy, overshadowed by the region's more famous Chardonnay. However, dedicated producers are increasingly focusing on Aligoté, using modern techniques to enhance its natural freshness and complexity. Fermentation typically occurs in stainless steel tanks to preserve the grape's bright, fruity characteristics, although some producers experiment with oak aging to add depth and texture. Aligoté is also famously used in the classic French cocktail "Kir," where it is mixed with crème de cassis. Outside of Burgundy, Aligoté is grown in countries such as Bulgaria, Russia, and even the United States, where it continues to gain recognition for its unique and versatile profile. Overall, Aligoté wines offer a delightful combination of vibrant acidity, fresh fruit flavors, and subtle complexity, making them a charming and often undervalued choice for wine enthusiasts.
