Soil type consists of ancient marine sedimentary and alluvial deposits with high drainage properties and an extremely low water table. This, along with Yamhill-Carltons warm days and cool evenings, creates substantial vine stress that results in the production of small, intense berries and very low tonnage per acre.

Nicolas-Jay is the story of a three-decade friendship between famed Burgundian winemaker Jean-Nicolas Meo and visionary music entrepreneur Jay Boberg, and their shared love of Oregon Pinot Noir. It is also the story of their desire to build something lasting together, while creating a distinctive expression of great Willamette Valley Pinot Noir. At Nicolas-Jay, this is achieved by applying viticultural and winemaking experience gained from working with the grands crus of Burgundy to the finest grapes from Oregon. This includes fruit from the older vines of Nicolas-Jay’s own organically farmed Bishop Creek Vineyard on the hillsides of the Yamhill-Carlton appellation, as well as grapes from other top Willamette Valley vineyards, including Nysa, Momtazi, Hyland and La Colina.. From this fruit, Jean-Nicolas, Jay and talented Associate Winemaker Tracy Kendall make alluring and expressive wines that convey the special character of Oregon Pinot Noir.

Pinot Noir is a red wine grape variety that is known for its delicate and nuanced character. The grape is relatively difficult to grow, but when it is grown in the right conditions, it produces some of the finest and most sought-after wines in the world. Pinot Noir wines are known for their complexity and a wide range of flavors and aromas, which are often described as being "red" or "dark" fruit flavors such as cherry, strawberry, and raspberry, as well as earthy, spicy, and floral notes.
Pinot Noir wines tend to be light- to medium-bodied with a delicate structure and a moderate level of tannins and acidity. The flavor profile of Pinot Noir wines can vary greatly depending on where it is grown, for example, Pinot Noir from Burgundy, France, tends to be elegant and nuanced, with a focus on red fruit and floral notes, while Pinot Noir from Oregon and California tends to be more full-bodied and have a higher proportion of dark fruit flavors.
Pinot Noir is a wine that pairs well with a wide range of foods, particularly poultry, duck, pork and mushroom-based dishes. Due to its delicate character, it's often recommended to serve it slightly chilled to enhance its fruit and floral aromas, and to avoid overpowering the wine with strong or spicy foods.
