The Paring Pinot Noir 2021
$59.06 Original price was: $59.06.$53.15Current price is: $53.15.
A smooth and deeply fruited Pinot Noir, the wine enraptures the minute it hits the glass. Its bright red fruit mixes with a hint of plum and spice on the nose. This is a bolder style of Pinot Noir, but it will more than satisfy those who crave nuance and refinement. The palate is round, soft and harmonious with spicy red cherry intermingling with the right amount of oak. This is truly a best-in-class Pinot Noir.

The Paring was born in 2006 out of a desire to explore, experiment and excite—without rules.
Made from the vineyard blocks that are either too young or don't fit into the vintage style of the highly acclaimed JONATA and The Hilt wines—The Paring is a cut of each estate. The Paring puts pedigree first, and then lets imagination take over.
The grapes are sourced primarily from three Santa Barbara regions on the vanguard: Santa Ynez Valley, Sta. Rita Hills and Santa Maria Valley.

Pinot Noir is a red wine grape variety that is known for its delicate and nuanced character. The grape is relatively difficult to grow, but when it is grown in the right conditions, it produces some of the finest and most sought-after wines in the world. Pinot Noir wines are known for their complexity and a wide range of flavors and aromas, which are often described as being "red" or "dark" fruit flavors such as cherry, strawberry, and raspberry, as well as earthy, spicy, and floral notes.
Pinot Noir wines tend to be light- to medium-bodied with a delicate structure and a moderate level of tannins and acidity. The flavor profile of Pinot Noir wines can vary greatly depending on where it is grown, for example, Pinot Noir from Burgundy, France, tends to be elegant and nuanced, with a focus on red fruit and floral notes, while Pinot Noir from Oregon and California tends to be more full-bodied and have a higher proportion of dark fruit flavors.
Pinot Noir is a wine that pairs well with a wide range of foods, particularly poultry, duck, pork and mushroom-based dishes. Due to its delicate character, it's often recommended to serve it slightly chilled to enhance its fruit and floral aromas, and to avoid overpowering the wine with strong or spicy foods.
